Ingredients:

  • 1 cup barley
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 lb lamb or beef stew meat
  • 6 cups water or beef broth
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon dried mint
  • 1/2 cup kidney beans (optional)
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh cilantro

Instructions:

  1. Rinse barley and soak it in water for at least 2 hours or overnight.
  2. In a large pot, heat the vegetable oil over medium heat. Add onions and garlic and sauté until they are golden brown.
  3. Add meat and sauté until it’s browned on all sides.
  4. Add turmeric, salt, pepper, cinnamon, cumin, and coriander to the pot and stir for about 1 minute.
  5. Add water or broth to the pot and bring it to a boil. Reduce heat and let it simmer for 45 minutes to an hour, until meat is tender.
  6. Drain the barley and add it to the pot. Also add the kidney beans, if using. Let it simmer for another 30-45 minutes until the barley is fully cooked and tender.
  7. Add chopped parsley, cilantro, and dried mint. Stir well and let it simmer for another 10-15 minutes.
  8. Serve hot with some warm bread on the side.

Hier ist ein Rezept für persisches Ashe Jow (آش جو), auch bekannt als Gerstensuppe:

Zutaten:

  • 1 Tasse Gerste
  • 1 Zwiebel, gehackt
  • 3 Knoblauchzehen, gehackt
  • 2 Esslöffel Pflanzenöl
  • 450g Lamm- oder Rindfleisch, in Würfel geschnitten
  • 6 Tassen Wasser oder Rinderbrühe
  • 1 Teelöffel Kurkuma
  • 1 Teelöffel Salz
  • 1/2 Teelöffel schwarzer Pfeffer
  • 1/2 Teelöffel Zimt
  • 1/2 Teelöffel Kreuzkümmel
  • 1/2 Teelöffel Koriander
  • 1/2 Teelöffel getrocknete Minze
  • 1/2 Tasse Kidneybohnen (optional)
  • 1/2 Tasse gehackte frische Petersilie
  • 1/2 Tasse gehackter frischer Koriander

Anleitung:

  1. Gerste abspülen und für mindestens 2 Stunden oder über Nacht einweichen.
  2. In einem großen Topf das Pflanzenöl bei mittlerer Hitze erhitzen. Zwiebeln und Knoblauch hinzufügen und braten, bis sie goldbraun sind.
  3. Fleisch hinzufügen und braten, bis es auf allen Seiten braun ist.
  4. Kurkuma, Salz, Pfeffer, Zimt, Kreuzkümmel und Koriander zum Topf hinzufügen und etwa 1 Minute lang umrühren.
  5. Wasser oder Brühe zum Topf geben und zum Kochen bringen. Hitze reduzieren und 45 Minuten bis 1 Stunde köcheln lassen, bis das Fleisch zart ist.
  6. Gerste abtropfen lassen und zum Topf geben. Ebenfalls die  Kidneybohnen, falls verwendet. Nochmals 30-45 Minuten köcheln lassen, bis die Gerste vollständig gekocht und zart ist.
  7. Gehackte Petersilie, Koriander und getrocknete Minze hinzufügen. Gut umrühren und weitere 10-15 Minuten köcheln lassen.
  8. Heiß servieren und mit etwas warmem Brot servieren.
