how to make Homemade Iranian Barbari Flat Bread

Another great tasting flat bread recipe. This time from Iranian traditional bread: Barbari, one of my favorites, I’d say most Armenian bakeries bake Barbari and it’s so delicious that I decided to give it a try and make the homemade version.Barbari has a slight resemblance with Armenian Matnakash ,but it’s so much simpler in making and tastes quite different due to the fact that it’s got sesame seeds which gives the bread a specific taste and look. Recipe is pretty basic and there’s no way to fail it:)
For the bread dough
3 cups of all purpose flour
1 1/2 cups of warm water
1 tsp instant dry yeast
1 1/2 tsp salt
1 1/2 tsp sugar
Semolina or cornstarch for dusting the work surface
You will also need sesame seeds
For the spread
2/3 cup water + 1 tsp flour + 1 tsp baking soda
Mixed and brought to the boil
This mixture will help to shape the dough and stick sesame seeds to the bread
