Perfect Flatbread recipe for an incredibly soft flatbread : German with English subtitles!

Flatbread or pide are one of my absolute favorite types of bread to eat. It is perfect for grilling or simply as a side dish for various dishes.
I’ve been experimenting with the recipe for a while now, because otherwise the flatbreads were always too heavy and not airy enough for me. Now I can finally present you my final recipe and hope you all bake diligently.
It is not easy to work with such a soft or liquid dough, but it is definitely worth it for the end result!
1kg flour (normal wheat flour)
600-650ml warm water (each flour behaves differently, so you have to grope for the right consistency)
4tbsp neutral oil
4tbsp yogurt (I used 10% Greek)
1 teaspoon of sugar
2 teaspoons of salt
1pack dry yeast or a good half cube of fresh yeast
to brush / sprinkle:
2 egg yolks with a little water
Roasted sesame seeds (just buy normal sesame seeds and then roast them in the pan beforehand)
or for a crispy crust:
2/3 glass of cold water, 1.5 tablespoons of flour. Heat everything with stirring and then let it cool. Now you can use this porridge (it should not be too thick so that you can carefully spread it on the flatbread) instead of the egg and you get a great crust! I tried it myself!
