Vegan potato mushroom soup

To a pot add 2 tablespoons of butter
add 1 chopped onion
2 stalks celery chopped
2 large carrots chopped saute for three minutes
add 5 cloves of garlic chopped sauce for two minutes,
add salt and pepper to taste
add 4 to 5 tablespoons of flour stir and cook for 2 minutes to cook the flour taste out next add 2 cups of plain rice milk or soy milk
add 1 bay and about 15 swipes of nutmeg on a grater or 1/4 teaspoon 🙂
add in 3 cups vegetable broth
peel and chop 5 russet potatoes add to the pot bring to a boil then simmer until potatoes are done!
Garnish:
scallions
vegan sour cream
frech fried onions
