The vanilla cream filling makes for 6 to 7 pieces so double the cream filling recipe to fill all the puffs.

Ingredients for Puff Dough :
Makes 12 to 14 pieces depends on desired sizes
1/2 cup milk
1/2 cup water
2 tbsp sugar
1/2 tsp salt
1/2 cup unsalted butter/margarine
1 cups flour, sifted
3 large eggs
Little of powdered sugar for dusting

Ingredients for Vanilla Cream Filling :
Makes for 6 pieces puff filling.
2 tbsp flour
2 tbsp corn starch
1/4 cup granulated sugar
2 large egg yolk
300 ml of milk
1 tsp vanilla sugar/extract
In a bowl, mix flour and corn starch. Set aside.
In another bowl, whisk sugar and yolks until combined and thickened.
Pour yolk mixture into the flour mixture, whisk well until combined.
Heat milk and vanilla in a saucepan until small bubbles, remove from heat. Add egg yolk mixture into the milk. Stir continuously until combined.
Put back on the heat over low heat. Stir until thickened and remove from heat.
Strain the vanilla cream into a bowl to remove any lumps.
Now we have smooth delicate vanilla cream.
Cover the bowl with plastic wrap touched the surface of the cream to prevent dryness. Allow cooling then chill in the refrigerator until ready to use.
