Ashpazi Ba Sana
white or brown flour 1 cup
liquid oil (olive, walnut, etc) 3 tbsp
salt 1 tsp
add the salt to the flour and mix. add 2 tbsp of the oil into the flour and mix. add 1 tbsp of water to the flour and start kneading it. keep adding the water little little and keep kneading until you create a dough. add 1 tbsp remaining oil over it and smooth the dough. cover the dough and keep aside for 15 minutes.
after 15 minutes, keep a plate of flour next to you and start making small balls out of the dough and apply them to the flour. then sprinkle some flour on the surface and using a rolling pin flatten the small balls to create a flat bread. keep adding flour to the dough and surface to avoid sticking to the rolling pin or the surface. over the high heat place a flat pan and let it be hot. over another high heat place a heat diffuser. place the flat bread onto the pan first and wait for the small bubble to appear on the bread then turn the bread around and keep for 10 seconds. then transfer the bread over the heat diffuser and keep each side for 5 seconds.
repeat the same process for each bread.
